You must know by now, how much I love my fish right? Like you needed a reminder, let me count the ways I love fish; Trout, Tilapia, Salmon …. so today I decided to add a fourth way of loving fish with this baked orange-glazed salmon recipe. This recipe is awesome – if I may say so myself!. I loved it so much, I wanted to keep it to myself (being honest here)..but then I had second thoughts because it is really too good to be kept a secret.
You’ll feel really smug when you make this delicious salmon, and so you should. You’ve just made an incredible choice for your heart’s health, and the flavours of the orange, soy and dark muscovado sugar really bring this recipe together. This is what I love about cooking. There is simply no end to what you can do with flavours, and this appeals to the creative side of my brain.
.So here goes me feeling rather benevolent and altruistic…and I hope you enjoy this as much as I did. On the ease scale with 1 being super-no-brainer-easy, and a 10 being an advanced-degree-in-cooking-required-before-attempting, I would rate this a 1. Now how’s that for easy? I am not even going to mention the health benefits of salmon – all that omega-3 is just what the doctor ordered.

So get your marinade going, pop this fillet in the oven, and pour yourself a glass of wine. You are just about to be initiated into food heaven – at least my idea of food heaven..
- 2 salmon fillet approx. 150g each
- 1 orange medium-sized or 200ml freshly squeezed juice
- 30 ml honey
- 30 ml soy sauce
- 20 g muscovado sugar
- 2 garlic cloves
- 30 g ginger
- 1 tsp butter
- Squeeze the orange extracting about 200mls of orange juice into a pan. Add the honey, soy sauce, muscovado sugar, garlic and ginger to the pan.
- Place on medium heat, stirring occasionally for approximately 5 minutes until the sugar has dissolved. Take off the heat and allow the marinade to cool. Preheat your oven to 200 degrees Celsius or 180 degrees Celsius if using a Fan-assisted oven.
- Cut out a rectangular piece of foil which you will use to cook the fish. Make sure it is large enough to enclose the fish completely. Baste the salmon fillets with the marinade, and then place your fish on the cut-out foil. Pour the rest of the marinade into the foil.
- Place a slice of orange and a dollop of butter on the fillet, then wrap the foil around the fish enclosing the fish in the tent while leaving a little opening at the top of tent for the air to escape. Bake in the oven for 20 minutes.
