A quick and easy 5-minute avocado egg toast for breakfast on-the-go.

There are so many ways to eat an avocado – think avocado bruschetta or avocado salsa or the many variants of avocado bowls or avo-bowls as I like to call them, or avocado salads. I know I keep going on about avocado, and I have probably eaten more than my fair share of these babies but.. they are so versatile, so nutrient-dense and packed with anti-oxidants, and they taste so good.

Are you short on time in the mornings? Need a simple but healthy breakfast idea? You are in good company. Look no further! Avocado to the rescue. Pair with a boiled egg on wholegrain bread or toast, and this protein-packed and fibre-rich breakfast will keep you feeling full for hours, and help control cravings.

It’s also delightfully easy to make, so if the thought of turning on the stove before heading out in the morning is not appealing, simply boil the eggs the previous evening et voila….

The key to this sandwich is the salt and pepper, which coaxes out the flavours of the bread, avocado and egg and brings it all together.Ready in less than 5 minutes and at under 400 calories per serving, there’s no reason not to indulge!

- 1 50g wholegrain bread toasted if you prefer
- 0.5 avocado
- 1 egg hard boiled for 5 minutes
- red chilli flakes a handful
- salt to taste
- black pepper to taste
- Place the egg in a pot of cold water and bring to boil. Reduce heat and leave egg to sit in the pot for 5 minutes. While the egg is boiling, toast your wholegrain bread to your desired level of "done-ness".
- Add some salt to the avocado and coarsely mash the avocado, so it is lumpy rather than smooth.
- Spread the coarse mash on the bread/toast and sprinkle the red chilli flakes and black pepper over it.
