
That’s it! The Christmas holidays are over and it’s back to life, back to reality (sing it Soul II Soul). And reality consists of many harried week days – thanks to school runs, work deadlines and of course, catering to the whims of a feisty toddler. So it’s no surprise that my preference for week night dinners are easy-to-rustle-up meals, like baked chicken drumsticks.

Introducing my version of a sweet and sticky baked chicken legs which is to-die for! This recipe delivers chicken drumsticks and thighs that have been marinated in incredible African flavours and baked to golden perfection – the result: moist, succulent and flavoursome chicken legs that I can only describe as heaven on a plate!
With only 5 easy-to-find ingredients, this recipe could not be simpler or tastier…believe me.
- 6 chicken legs
- 50 g dark muscovado sugar
- 40 ml balsamic vinegar
- 40 ml soy sauce
- 2 tbsp olive oil extra virgin
- 30 g ginger root peeled and finely grated
- 4 garlic cloves
- Combine the sugar, vinegar, soy sauce, olive oil, ginger and garlic in a bowl and mix until the sugar dissolves in the liquid.
- Pour the mixture over the chicken legs, ensuring the chicken is well coated with the marinade. Leave to marinate in the refrigerator for a minimum of 4 hours or preferably overnight.
- Pre-heat your oven to 200 degrees centigrade or 180 degrees centigrade (Fan-assisted). Bake for 40 - 45 minutes or until the chicken is done.
