
Summer is finally here in Switzerland (after several weeks of non-stop rain), and its’ finally time to make one of my favourite drinks – Mango & Lemon Iced Tea. I think it’s fair to say we unequivocally enjoy our teas in Africa – in different forms.

I am a “tea” person, and I remember noticing during ,my first visit to Nairobi, just how much tea was consumed at all times of the day. Black tea – with milk – just like in England was fairly common place. In Northern Nigeria, you’d be hard pressed not to receive an invitation to share a cup of tea when visiting friends, or browsing through merchants’ stalls in the market place..Every decent merchant has a pot of tea on tap!

Mango is also fairly common place in Africa, and during the long hot summers, you cannot beat a chilled glass of mango and lemon iced tea. There’s just so much going on in this drink. A combination of bergamot-infused tea and the sweetness of the mangoes, offset by the tartness of the lemons results in a cacophony of flavours that instantly transports one to a tropical island..perhaps of Zanzibar? I digress…
So to start, first make your mango lemonade and then dilute it with iced tea. The key to a good glass of lemonade is balanced acidity and sweetness – here is the recipe to an easy and classic lemonade which you can use as a base for all lemonade drinks. And all that remains is to close your eyes, take a sip and enjoy!
- 1 mango large
- 5 servings easy classic lemonade see link to recipe in the notes below
- 500 ml water
- 1 bag earl grey tea
- ice cubes to serve
- Peel and chop the mangoes, then puree them in a blender. Set aside in refrigerator to chill.
- Make the tea. Add the tea bag to a 500 ml of boiled water. Allow the teabag to steep for 5 - 7 minutes. Remove the bag and allow tea to cool.
- When cool, combine the tea, lemonade, and mango puree. Stir to mix and serve with mint leaves, ice cubes and lemon slices.
