
If you are looking for a recipe for moist, juicy and flavoursome salmon fillets, then you are in luck! This honey-mustard baked salmon recipe is one of my favourite fall-back recipes on week nights, and it’s easy to see why.
All you have to do is rustle up a quick marinade, baste your fillets in the marinade and pop in the oven for 20 minutes and BAM! you are good to go. In terms of ingredients, and excluding the salmon fillets, this recipe requires only six ingredients; soy sauce, honey, garlic, ginger, dijon mustard, and a dollop of butter This dish is so easy, so nutritious, and so flavourful, it’s made it into my weekly rotation.
Serve with lemon-flavoured wild rice.
- 2x 150g salmon fillet
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp dijon mustard
- 1 garlic clove peeled and crushed
- 1 tsp grated ginger
- 1 tsp grass-fed butter
- Preheat your oven to 200 degrees Celsius or 180 degrees Celsius if using a Fan-assisted oven.
- Cut out a rectangular piece of foil which you will use to cook the fish. Make sure it is large enough to enclose the fish completely.
- Prepare your marinade. In a bowl, combine the soy sauce, honey, dijon mustard, garlic and ginger.and mix. Baste the salmon fillets with the marinade, and then place your fish on the cut-out foil.
- Place a dollop of butter on the fillet, then wrap the foil around the fish enclosing the fish in the tent while leaving a little opening at the top of tent for the air to escape.
- Bake in the oven for 20 minutes. Serve with lemon flavoured wild rice.
