Instructions
Add spinach and rocket salad leaves to a bowl. Peel and pit the avocado, and cut into large chunks. Add to bowl.
Scatter the cherry tomatoes, slices of cheese, and sunflower seeds onto the salad.
In a different bowl, combine the juice of half a lemon, extra virgin olive oil, salt and pepper. Shake to mix thoroughly
