This Watermelon Popsicle is a Healthy and Sugar-Free Dessert for A Hot Summers’ Day

It feels like the first true month of summer. The beginning of summer… and of my addiction to watermelon. A beginning of an addiction. Now, that is what I call a good beginning. Because beginnings should be potent, and addictive.

 

A good beginning is a strong magnetic force, a mesmerising pull, the look between two lovers across a crowded room that speaks volumes. It is a promise of an exciting journey to an incredible destination. A promise of more to come.  That… is this watermelon popsicle.

This watermelon popsicle is another one of my snacking guilty pleasures. (yes, there are a few..) It is not a guilty pleasure because it is unhealthy but a guilty pleasure because guilty pleasures are decadent, and luxurious – everything that pineapple is, to me…

 

I had real issues sharing these popsicles with anyone, including the kids. And speaking of the kids, they did ask for seconds and thirds. And I pointed in the direction of the refrigerator, while all the time resisting, with an immense herculean effort (if I may be so truthful) the urge to scream,  “No, you’ve had enough, these are mine!“.

Over the years, I have come to terms with the fact that some things were meant to be together – like honey and pineapple (another guilty pleasure), or watermelon and pineapple. And I have come to terms that I am addicted to watermelon and pineapple popsicles. And you know what? I can live with that..

 

The truth is that many beginnings fail to lie up to their expectations, and die a sudden and almost premature death. Not this one, not this time. I choose to believe that this is the beginning of a long and amazing summer. And I choose to believe in my on-going love affair with food and with words.

 

Watermelon. Pineapple. Lime. Love..

 

This could be a beginning. For you… For me… For us..

Ingredients

  1. Peel and dice the pineapple and watermelon. Squeeze the lime and reserve the juice
  2. Place in a blender and blend thoroughly. Then add the lime juice, blend for a few seconds to mix.
  3. Transfer into popsicle moulds and freeze for a minimum of 4 hours or until completely set.
