Combine the sugar, vinegar, soy sauce, olive oil, ginger and garlic in a bowl and mix until the sugar dissolves in the liquid.
Pour the mixture over the chicken legs, ensuring the chicken is well coated with the marinade. Leave to marinate in the refrigerator for a minimum of 4 hours or preferably overnight.
Pre-heat your oven to 200 degrees centigrade or 180 degrees centigrade (Fan-assisted). Bake for 40 - 45 minutes or until the chicken is done.
