Peel the potatoes, then wash them under cold running water. Cut each potato in half, then cut each half lengthwise into half, and then each piece in half again, so you end up with 8 wedges. Place all wedges in a glass bowl.

Add the salt, pepper, cinnamon and paprika to the potato wedges. Drizzle the olive oil over the wedges and use your fingers to mix the spices, thoroughly coating each wedge.

Transfer the wedges to a baking tray lined with parchment paper, and bake at 180 degrees (fan-assisted) or 200 degrees for 35 - 45, until golden. Remove from oven and allow to cool before serving.
