fonio Fonio is a traditional West African grain that some believe could be the “new quinoa”; it could even replace wheat because of its drought-resistant and gluten-free qualities. Fonio can grow in poor soil, and no pesticides are needed for its cultivation. In Senegal, where it’s part of local customs and traditions, fonio is used in breakfast, lunch, and dinner dishes.
